If you want a simple pumpkin activity that is going to take up a lot of the time, just use pumpkins. You can give each child a small pumpkin, and they can either carve it, or they can paint it.

This will depend on how comfortable you are, and how much help you have. This also works as a goody bag, as each child gets to take their pumpkin home with them.
